PEPPERS
Are
you up to creating a colorful piece of art?
As you can tell I am all into not following recipes, but just mixing and
matching sort of like fashion designing.
What I like about peppers is that you can get them in all different
colors and shapes. There are green, red
and orange ones!!! You can pick the
color of your desire.
Okay
now, this can be either a lunch or dinner meal…
I like to make at least enough for leftovers for the next day. To begin you have to decide what you wish to
stuff inside. I can give ideas, but it is your masterpiece ~
so think and act.
Some
ideas of the ingredients to use for the stuffing.
1.
Wild
black rice, lentils and other beans, tomatoes
2.
Mushrooms
3.
Celery
4.
Onions
5.
Olives
without the pits
6.
Peppers
7.
Squash
8.
Egg
plant
9.
Herbs
of your liking
10. Grass feed beef or lamb

Add
2 through 9 with 1

I
love to add wild black rice with a mixture of vegetables, such as mushrooms,
onions, olives, celery, even some peppers along with seasoning of your
choice. I will post the different types
of herbs that are healthy for you in the next post.

Of
course before you add the ingredients together you have to cook the rice
separate. Most packages have the
directions on them. Sauté the vegetables
in Avocado oil or Olive oil until they get nice and soft.

Mix
the vegetables into the rice then stuff it into the peppers.

Have
the oven pre-heat until ready to put the peppers in the oven. Once the peppers are in, set the oven to
375. Cook until your liking…. I love my peppers nice and soft.
Then
add as a topper, cheese. I use goat
cheese and the organic market that I go to here in Ajijic Mexico has homemade
cheese. YOU CAN ALSO MAKE IT MEXICAN
STYLE BY JUST ADDING HOT SPICES.
The
key to making your dish healthy and organic.
Just imagine the smell and taste along with the looks. You can create something yourself that looks
like the below pictures. It’s your turn
