Start by turning on some music and
take time to unwind from the stressful day of obstacles
We start by boiling water to add the
couscous in, while this is taking place add a little avocado oil in a frying
pan.
While you are multi-tasking cut up your
vegetables ~ some will be sautéed in
the oil you just placed in the pan.
After you cut up the vegetables and
the oil is hot ~ place the eggplant and dell peppers into the pan. Sauté to
your liking.
In the same pan place your chicken
breast to grill on both sides until cooked.
Now your couscous should be ready ~ I
like to add some herbs to dress up the flavor.
Now this is where you become creative
and design your plate with couscous first, chicken and then add the cooked egg
plant and dell peppers on top.
Arrange the carrots, cucumber, and
tomato’s glazed on the top with balsamic vinegar.
This dish would be great with some
wine. I have ginger beer which is also fabulous.
